Ashley Zubia - Cafe Alvarez

Ashley Zubia sought assistance from the SBDC to purchase an existing food truck business called Llano Cubano, known for its Cuban-style sandwiches and dishes. With a background in restaurant management, Ashley aimed to expand the business beyond its weekend operations at a single location. The SBDC helped Ashley develop financial projections and navigate the process of acquiring the business, including meeting requirements like the Lubbock Mobile Food Vendor Ordinance.

With the SBDC's guidance, Ashley secured a business loan and became the owner of Llano Cubano. Under her leadership, the business expanded to include a small sit-down restaurant called Café Alvarez, offering additional Cuban cuisine and salsa music and lessons. Within a year, Ashley transformed the once-weekend food truck into a popular destination for Cuban food and culture, demonstrating remarkable growth and success.
